Eastern European traditions have long valued cultured milk products for immune-stimulating properties. Throughout history, humans have prized organ meats for their health benefits and their nutrient density. Unfortunately, the past 150 years have seen a significant decline in the consumption of organ meats in Western culture, particularly among middle and upper-class American households. This change is largely attributable to the rise of factory farming during the Industrial Revolution in the mid-19th century.
